
ω-5-gliadin, a storage protein in wheat grains, is a major allergen in wheat-dependent, exercise-induced anaphylaxis (WDEIA). For recombinant production in E. coli the whole gene from Triticum aestivum was cloned. ω-5-gliadin is purified to more than 95% by extraction and chromatographic techniques.
